Traditional Indian Milk Cake (Kalakand Style)
Milk Cake is a rich, decadent, and grainy traditional Indian sweet made by reducing full-fat milk and sugar with a slight hint of acidity to create its signature crumbly texture.
Ingredients
- Full-Fat Milk: 2 liters (do not use toned or skimmed milk)
- Sugar: 1/2 cup to 3/4 cup (adjust to taste)
- Lemon Juice or Vinegar: 1 to 1.5 teaspoons (for slight curdling and grainy texture)
- Ghee: 2 tablespoons (for richness and greasing)
- Cardamom Powder: 1/2 teaspoon
- Chopped Pistachios or Almonds: 1 tablespoon (for garnishing)
Step-by-Step Preparation Instructions
1. Reducing the Milk
- Pour the full-fat milk into a heavy-bottomed deep pan or kadhai.
- Bring it to a boil over medium-high heat, stirring occasionally.
- Simmer on medium heat, stirring frequently, until reduced to about half its original volume.
2. Creating the Grainy Texture
- Dilute the lemon juice or vinegar with a tablespoon of water.
- Add half of this mixture to the boiling milk while stirring gently to form tiny, soft granules.
3. Sweetening and Thickening
- Continue stirring continuously on medium-low heat as the milk thickens.
- Add the sugar in two batches, stirring well until it dissolves completely.
4. Adding Ghee and Finishing
- Add the ghee a little at a time while stirring vigorously to prevent sticking.
- Stir in the cardamom powder and cook until the mixture turns a rich caramel-brown color in the center.
5. Setting and Molding
- Transfer the hot mixture into a ghee-greased container and press down evenly.
- Cover with a warm cloth to trap heat and let it rest undisturbed for 5 to 6 hours or overnight before slicing.
